Description

Cozy and indulgent, these Easy Creamy Beef & Cheese Burritos are loaded with a creamy beef mixture, refried beans, and melted cheese, all wrapped in a soft tortilla and baked to perfection.


Ingredients

  • 1 lb ground beef (80/20, drained)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup sour cream (full-fat)
  • 1 cup refried beans (canned)
  • 1 teaspoon taco seasoning
  • 4 large tortillas (burrito-size)
  • 1/2 cup diced tomatoes (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Brown the beef in a skillet over medium heat until no longer pink, breaking it up as it cooks.
  3. Drain excess fat from the beef.
  4. Stir in the taco seasoning and refried beans until smooth and well combined.
  5. Remove the skillet from heat, then stir in sour cream and shredded cheese until creamy.
  6. Lay tortillas out, divide filling between them, and place it slightly off-center.
  7. Roll the burritos tightly and place them seam-side down in the baking dish.
  8. Top with extra cheese and/or diced tomatoes if desired.
  9. Bake for 15–20 minutes until heated through and melty.
  10. Garnish with cilantro if using, and serve warm.

Notes

Can be made ahead of time and stored in the refrigerator. For the best texture, freeze unbaked assembled burritos.
