These Easy Chicken Sour Cream Enchiladas are a comforting family favorite, combining shredded chicken, creamy sauce, and melting cheese wrapped in warm tortillas.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) cream of chicken soup
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 cup chopped onions (optional)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken, sour cream, 1/2 cup of cheese, cream of chicken soup, garlic powder, salt, and pepper.
- Spoon a portion of the chicken mixture onto each tortilla and roll them up tightly.
- Arrange the rolled tortillas in a greased baking dish with the seam-side down.
- Pour enchilada sauce over the top, ensuring it covers all tortillas.
- Sprinkle with the remaining cheese.
- Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow it to cool slightly before serving to help set the delicious filling.
Notes
For added flavor, sauté onions and bell peppers before mixing them into the chicken filling. Use a rotisserie chicken to save on cooking time.
