Description

These Easy Chicken Sour Cream Enchiladas are a comforting family favorite, combining shredded chicken, creamy sauce, and melting cheese wrapped in warm tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) cream of chicken soup
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup chopped onions (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, sour cream, 1/2 cup of cheese, cream of chicken soup, garlic powder, salt, and pepper.
  3. Spoon a portion of the chicken mixture onto each tortilla and roll them up tightly.
  4. Arrange the rolled tortillas in a greased baking dish with the seam-side down.
  5. Pour enchilada sauce over the top, ensuring it covers all tortillas.
  6. Sprinkle with the remaining cheese.
  7. Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Allow it to cool slightly before serving to help set the delicious filling.

Notes

For added flavor, sauté onions and bell peppers before mixing them into the chicken filling. Use a rotisserie chicken to save on cooking time.
