Ingredients
- Diced Chicken: Boneless, skinless chicken breasts or thighs
- Taco Seasoning: Store-bought or homemade
- Tortillas: Flour or corn tortillas
- Cheese: Shredded cheddar, Monterey Jack, or a mix
- Olive Oil or Cooking Spray: For non-stick cooking
Instructions
- Heat a skillet over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
- Stir in taco seasoning and mix well, allowing the flavors to meld for a minute.
- Place one tortilla in the skillet. Layer with cooked chicken and a generous helping of cheese.
- Top with another tortilla.
- Cook for 2-3 minutes on each side until the tortillas are golden brown and crispy, and the cheese melts. Press gently with a spatula as it cooks.
- Remove from skillet, slice into wedges, and serve hot.
Notes
Serve with salsa, guacamole, or sour cream. For added flavor, squeeze lime over the quesadilla before serving.
