Ingredients

  • Diced Chicken: Boneless, skinless chicken breasts or thighs
  • Taco Seasoning: Store-bought or homemade
  • Tortillas: Flour or corn tortillas
  • Cheese: Shredded cheddar, Monterey Jack, or a mix
  • Olive Oil or Cooking Spray: For non-stick cooking


Instructions

  1. Heat a skillet over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  2. Stir in taco seasoning and mix well, allowing the flavors to meld for a minute.
  3. Place one tortilla in the skillet. Layer with cooked chicken and a generous helping of cheese.
  4. Top with another tortilla.
  5. Cook for 2-3 minutes on each side until the tortillas are golden brown and crispy, and the cheese melts. Press gently with a spatula as it cooks.
  6. Remove from skillet, slice into wedges, and serve hot.
