Description

These Easy Chicken Enchiladas are a crowd-pleasing dish perfect for busy weeknights, featuring a simple mixture of shredded chicken, cheese, and red enchilada sauce wrapped in tortillas.


Ingredients

  • 2 cups shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) red enchilada sauce
  • 8-10 corn tortillas
  • 1/2 cup chopped onions (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté 1/2 cup of chopped onions until they’re translucent.
  3. Combine 2 cups of shredded chicken with half of the enchilada sauce and season with salt and pepper to taste in a large bowl.
  4. Warm the 8-10 corn tortillas slightly in a microwave or on a skillet until they’re pliable.
  5. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up tightly.
  6. Place the rolled tortillas seam-side down in a baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle the remaining cheese.
  8. Bake for 20 minutes or until the cheese is bubbly and golden.
  9. Serve hot and enjoy!

Notes

Customize the filling by adding beans, veggies, or different spices for a unique twist. Ensure tortillas are warm for easy rolling to prevent tearing.
