These Easy Chicken Enchiladas are a crowd-pleasing dish perfect for busy weeknights, featuring a simple mixture of shredded chicken, cheese, and red enchilada sauce wrapped in tortillas.
Ingredients
- 2 cups shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) red enchilada sauce
- 8-10 corn tortillas
- 1/2 cup chopped onions (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté 1/2 cup of chopped onions until they’re translucent.
- Combine 2 cups of shredded chicken with half of the enchilada sauce and season with salt and pepper to taste in a large bowl.
- Warm the 8-10 corn tortillas slightly in a microwave or on a skillet until they’re pliable.
- Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up tightly.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle the remaining cheese.
- Bake for 20 minutes or until the cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
Customize the filling by adding beans, veggies, or different spices for a unique twist. Ensure tortillas are warm for easy rolling to prevent tearing.
