Description

Ingredients

  • 1 rotisserie chicken, shredded
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup milk
  • 1 tablespoon butter
  • Optional: chopped parsley for garnish


Instructions

  1. In a large pot, combine the shredded rotisserie chicken, chicken broth, and heavy cream. Bring to a simmer over medium heat.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Stir in the milk and melted butter until a dough forms.
  3. Drop spoonfuls of the dough into the simmering chicken mixture.
  4. Cover the pot and cook for 10-15 minutes, or until the dumplings are fluffy and cooked through.
  5. Serve hot, garnished with chopped parsley if desired.

Notes

For added flavor, sauté onions, garlic, and carrots before adding the chicken and broth. You can substitute vegetables for added nutrients.
