Ingredients
- 2 ½ pounds russet or Yukon gold potatoes
- 3 tablespoons butter
- ½ onion, chopped
- 3 cloves garlic, minced
- 2 ½ cups heavy cream
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 teaspoon fresh thyme
- 3 cups cheddar cheese, grated
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Slice the potatoes thinly, about ⅛ to ¼ inch thick, and set aside.
- Melt the butter in a saucepan over medium heat. Add onions and sauté until softened, about 3 minutes. Stir in garlic and thyme.
- Sprinkle in the flour and gradually whisk in the heavy cream until smooth. Season with salt and pepper. Add cheese and stir until melted.
- Layer half of the potatoes in the dish, followed by half of the sauce, and half of the cheese. Repeat the layers.
- Cover with foil and bake for 40 minutes, then remove the foil and bake for an additional 20 minutes until golden brown and bubbly.
