Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup cheddar cheese, shredded
- 1 cup milk
- Salt and pepper to taste
- Optional toppings: bacon bits, green onions
Instructions
- Brown the ground beef in a large pot over medium heat. Once cooked, drain the excess fat.
- Add the chopped onion and minced garlic, stirring until the onion turns translucent.
- Pour in the beef broth, then add the diced potatoes, carrots, and celery. Bring to a boil.
- Reduce the heat, cover, and let it simmer until the vegetables are tender, approximately 15-20 minutes.
- Stir in the milk and shredded cheese, mixing until the cheese melts and the soup turns creamy.
- Season with salt and pepper to taste.
- Serve hot, topping with optional bacon bits and green onions if desired.

For a different twist, try using sweet potatoes or adding different vegetables like bell peppers or corn.
