Description

Delightfully fluffy banana pancakes perfect for a cozy breakfast for two.


Ingredients

  • 1 overripe banana
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon melted butter
  • Oil or butter for cooking


Instructions

  1. Mash the overripe banana until smooth.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in another bowl.
  3. Combine the milk, egg, and melted butter in a third bowl.
  4. Stir the wet ingredients into the dry ingredients until just combined. Gently fold in the mashed banana.
  5. Heat a skillet over medium heat and lightly grease it with oil or butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, about another 2-3 minutes.
  8. Serve immediately with maple syrup or your favorite toppings.

Notes

Use a very ripe banana for maximum sweetness. Don’t overmix the batter for fluffier pancakes.
