Ingredients
- 1 overripe banana
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 tablespoon melted butter
- Oil or butter for cooking
Instructions
- Mash the overripe banana until smooth.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in another bowl.
- Combine the milk, egg, and melted butter in a third bowl.
- Stir the wet ingredients into the dry ingredients until just combined. Gently fold in the mashed banana.
- Heat a skillet over medium heat and lightly grease it with oil or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, about another 2-3 minutes.
- Serve immediately with maple syrup or your favorite toppings.
Notes
Use a very ripe banana for maximum sweetness. Don’t overmix the batter for fluffier pancakes.
