Description
A delicious quick bread that tastes like fried apple fritters, filled with fresh apple chunks and topped with a sweet glaze.
Ingredients
- 2 medium baking apples, peeled and chopped
- ½ cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 large egg, room temperature
- ⅓ cup white granulated sugar
- ¼ cup vegetable oil
- ¼ cup full-fat sour cream, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract (for glaze)
- 3 tablespoons milk
Instructions
- Preheat the oven to 350°F and prepare your loaf pan with nonstick spray.
- In a medium bowl, combine apples, brown sugar, cinnamon, and ginger; toss to coat.
- In a large mixing bowl, whisk together the egg, sugar, oil, sour cream, and vanilla until smooth.
- In a separate bowl, mix flour, baking soda, and salt; fold into the wet ingredients until just combined.
- Fold in ¾ of the spiced apple mixture, being careful not to overmix.
- Pour the batter into the prepared pan and sprinkle the reserved apple mixture on top.
- Bake for 50-55 minutes until a toothpick comes out clean and internal temperature reaches 200°F.
- Cool in the pan for at least 30 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar, vanilla, and milk; drizzle over cooled bread before serving.
Notes
For best results, use tart apples that hold up well during baking. Adjust the glaze consistency with more powdered sugar if necessary.
