A delightful pineapple bake filled with caramelized pineapple, rich coconut, and a buttery cake.
Ingredients
- 1 can of pineapple slices
- 1 cup brown sugar
- 1/2 cup butter (melted)
- 1 cup shredded coconut
- 1 cup chopped nuts (optional)
- 1 box yellow cake mix
- 1 1/2 cups water
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease a large baking dish and arrange the pineapple slices in a single layer at the bottom.
- Blend the brown sugar and melted butter until well combined. Pour this mixture evenly over the pineapple slices.
- Sprinkle the shredded coconut and chopped nuts on top of the pineapple and sugar mixture.
- Prepare the yellow cake mix according to the package instructions, using the 1 1/2 cups of water.
- Pour the prepared cake batter over the layered ingredients in the baking dish.
- Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the dish to cool slightly before serving.

Serve warm with a scoop of vanilla ice cream or a drizzle of caramel for extra indulgence.
