Description

A fluffy breakfast treat that beautifully rises and can be served with sweet or savory toppings.


Ingredients

  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter (melted)
  • 1 tablespoon powdered sugar (for dusting)
  • 1/2 cup mixed berries (blueberries and raspberries)
  • Maple syrup


Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Combine the flour, eggs, milk, salt, and 2 tablespoons of melted butter in a blender. Blend until smooth, about 20 seconds.
  3. Heat the remaining melted butter in a 10-inch cast-iron skillet over high heat until foamy.
  4. Pour the batter into the hot skillet and place it in the oven immediately.
  5. Bake for about 18 minutes, or until puffed and golden brown.
  6. Remove the pancake from the oven, add mixed berries to the center, and dust with powdered sugar.
  7. Slice into pieces, drizzle with maple syrup, and serve warm.

Notes

Best served warm with fresh berries and maple syrup. For leftovers, cool completely before storing in an airtight container for up to 2 days.
