Description

A vibrant pasta salad combining tangy dill pickles and crispy bacon in a creamy dressing, perfect for picnics and gatherings.


Ingredients

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • Salt and Pepper to taste


Instructions

  1. Cook the Pasta: In a large pot, boil salted water and cook the short pasta according to package instructions. Drain and let it cool.
  2. Prepare the Bacon: In a skillet, cook the bacon until crispy. Drain on paper towels and crumble into pieces.
  3. Make the Dressing: In a large bowl, mix together mayonnaise, sour cream, pickle brine, yellow mustard, salt, and sugar until smooth.
  4. Combine Ingredients: Add the cooled pasta, crumbled bacon, pickles, cucumbers, cheese, red onions, and fresh dill to the bowl with the dressing. Stir gently to combine.
  5. Chill: Cover and refrigerate for at least one hour before serving to allow flavors to meld.

Notes

For a lighter version, substitute Greek yogurt for sour cream or use turkey bacon.
