A vibrant pasta salad combining tangy dill pickles and crispy bacon in a creamy dressing, perfect for picnics and gatherings.
Ingredients
- 1 cup Mayonnaise
- 1/2 cup Sour Cream
- 1/4 cup Pickle Brine
- 1 tablespoon Yellow Mustard
- 1 teaspoon Kosher Salt
- 1 teaspoon Sugar
- 8 slices Bacon
- 8 ounces Short Pasta
- 1 cup Pickles
- 1 cup Mini Cucumbers
- 1 cup Mild Cheese
- 1/2 cup Red Onions
- 1/4 cup Fresh Dill
- Salt and Pepper to taste
Instructions
- Cook the Pasta: In a large pot, boil salted water and cook the short pasta according to package instructions. Drain and let it cool.
- Prepare the Bacon: In a skillet, cook the bacon until crispy. Drain on paper towels and crumble into pieces.
- Make the Dressing: In a large bowl, mix together mayonnaise, sour cream, pickle brine, yellow mustard, salt, and sugar until smooth.
- Combine Ingredients: Add the cooled pasta, crumbled bacon, pickles, cucumbers, cheese, red onions, and fresh dill to the bowl with the dressing. Stir gently to combine.
- Chill: Cover and refrigerate for at least one hour before serving to allow flavors to meld.
Notes
For a lighter version, substitute Greek yogurt for sour cream or use turkey bacon.
