  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 bell pepper, chopped
  • 4 cups fish or vegetable broth
  • 1 can diced tomatoes
  • Fresh herbs (like parsley or thyme)
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent.
  2. Add diced carrots, celery, and bell peppers. Stir occasionally for about 5-7 minutes until softened.
  3. Pour in the broth and canned tomatoes. Bring to a gentle simmer, then season with salt and pepper. Add herbs at this stage.
  4. Gently add fresh fish pieces to the simmering stew, cooking for another 5-10 minutes until the fish flakes easily.
