Ingredients
- Fresh white fish fillets (such as cod or tilapia)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 bell pepper, chopped
- 4 cups fish or vegetable broth
- 1 can diced tomatoes
- Fresh herbs (like parsley or thyme)
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent.
- Add diced carrots, celery, and bell peppers. Stir occasionally for about 5-7 minutes until softened.
- Pour in the broth and canned tomatoes. Bring to a gentle simmer, then season with salt and pepper. Add herbs at this stage.
- Gently add fresh fish pieces to the simmering stew, cooking for another 5-10 minutes until the fish flakes easily.
- Remove from heat, adjust seasoning if necessary, garnish with fresh herbs and serve hot.
