Ingredients

  • 1 lb ground chicken or finely diced cooked chicken breast
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 small red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup tomato sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup chicken broth
  • 4 brioche hamburger buns, toasted
  • 1 cup shredded pepper jack cheese
  • Fresh chopped parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and red bell pepper. Cook until softened, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground chicken, breaking it apart with a spatula, and cook until browned and fully cooked through.
  5. Stir in the Cajun seasoning, smoked paprika, and cayenne pepper, mixing well to combine.
  6. Pour in the tomato sauce, ketchup, Worcestershire sauce, and chicken broth. Stir everything together.
  7. Let the mixture simmer for 5-7 minutes, allowing it to thicken slightly.
  8. Serve the mixture over toasted brioche buns, topping with shredded pepper jack cheese and a sprinkle of fresh parsley.

Notes

For additional texture, consider adding finely chopped celery or carrots. Rotisserie chicken can be used for a quicker preparation.
