Ingredients
- 1 lb ground chicken or finely diced cooked chicken breast
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 small red bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup chicken broth
- 4 brioche hamburger buns, toasted
- 1 cup shredded pepper jack cheese
- Fresh chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and red bell pepper. Cook until softened, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground chicken, breaking it apart with a spatula, and cook until browned and fully cooked through.
- Stir in the Cajun seasoning, smoked paprika, and cayenne pepper, mixing well to combine.
- Pour in the tomato sauce, ketchup, Worcestershire sauce, and chicken broth. Stir everything together.
- Let the mixture simmer for 5-7 minutes, allowing it to thicken slightly.
- Serve the mixture over toasted brioche buns, topping with shredded pepper jack cheese and a sprinkle of fresh parsley.
Notes
For additional texture, consider adding finely chopped celery or carrots. Rotisserie chicken can be used for a quicker preparation.
