Ingredients
- 8 oz pasta (rotini or penne)
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil water in a large pot and cook pasta according to package instructions. Once done, drain and rinse under cold water to stop the cooking process.
- Combine ingredients: In a large mixing bowl, add the cooked pasta, diced cucumber, halved cherry tomatoes, red onion, parsley, and feta cheese.
- Make the dressing: In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Dress the salad: Pour the dressing over the pasta salad and gently toss until everything is coated evenly.
- Chill: For optimal flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
