These chewy brownie batter cookies are quick to make and full of rich chocolate flavor, perfect for any occasion.
Ingredients
- 1 box brownie mix
- 2 & 1/2 tbsp all-purpose flour
- 2 medium-sized eggs (about 50 grams each)
- 1/3 cup butter (melted and cooled)
- 1 tsp instant coffee (optional)
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the brownie mix, flour, eggs, melted butter, and instant coffee. Mix until just combined.
- Gently fold in the chocolate chips until evenly distributed.
- Scoop out 2 tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 8-9 minutes, keeping an eye on them to prevent overbaking.
- Allow to cool on the pan for 10 minutes before transferring to a cooling rack.
Notes
Consider serving warm with melted chocolate or vanilla ice cream. Store in an airtight container for up to three days.
