Description

A comforting lasagna soup that combines the flavors of traditional lasagna in a hearty and effortless soup form, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish


Instructions

  1. Brown the sausage, onion, and garlic in a skillet over medium heat until the sausage is browned. Drain any excess fat.
  2. Transfer the sausage mixture to your crock pot. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper, stirring until well combined.
  3. Set your crock pot to cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir in the broken lasagna noodles into the soup about 30 minutes before serving.
  5. Add the ricotta cheese once the noodles are tender and stir until everything is well mixed and creamy.
  6. Serve hot, garnished with mozzarella cheese and fresh basil.

Notes

For a lighter version, substitute ground turkey for sausage or use gluten-free noodles.
