A comforting lasagna soup that combines the flavors of traditional lasagna in a hearty and effortless soup form, perfect for busy weeknights or family gatherings.
Ingredients
- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the sausage, onion, and garlic in a skillet over medium heat until the sausage is browned. Drain any excess fat.
- Transfer the sausage mixture to your crock pot. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper, stirring until well combined.
- Set your crock pot to cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the broken lasagna noodles into the soup about 30 minutes before serving.
- Add the ricotta cheese once the noodles are tender and stir until everything is well mixed and creamy.
- Serve hot, garnished with mozzarella cheese and fresh basil.
Notes
For a lighter version, substitute ground turkey for sausage or use gluten-free noodles.
