A creamy, cheesy chicken and rice dish made in a slow cooker, perfect for busy weeknights and family meals.
Ingredients
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon minced garlic
- ½ onion, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1½ cups uncooked brown rice
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 2 cups shredded cheddar cheese
Instructions
- Prepare the chicken by cutting the chicken breasts into 1-inch pieces.
- Combine the chicken pieces, minced garlic, salt, pepper, chopped onion, chicken broth, cream of chicken soup, and uncooked brown rice in the crock pot.
- Mix thoroughly to ensure the rice is evenly distributed throughout the liquid.
- Cover and cook on high for 3.5-4 hours.
- Once the rice is cooked and the liquid is absorbed, stir in the shredded cheddar cheese and let it sit for 5-7 minutes.
- Serve warm and enjoy!
Notes
Serve with steamed broccoli or roasted green beans for a complete meal. Store leftovers in the refrigerator for up to 5 days.
