Ingredients
- 2 lbs beef chuck roast
- 4 cups beef broth
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Corn tortillas
- Chopped cilantro and onions for serving
Instructions
- Prepare the chili sauce by blending the dried guajillo and ancho chilies with minced garlic, cumin, oregano, and a bit of beef broth until smooth.
- Add the beef chuck roast to the Crock Pot and pour the chili sauce over it.
- Pour in the remaining beef broth and season with salt and pepper.
- Close the lid and cook on low for 480 minutes or on high for 240 minutes until the meat is tender.
- Remove the beef and shred it using two forks before returning it to the pot to soak up the delicious sauce.
- Serve the birria in warm corn tortillas, garnished with chopped cilantro and onions.
