Description

Crock Pot Birria Tacos feature slow-cooked beef chuck roast infused with spices and served in warm corn tortillas, creating a deliciously rich meal perfect for any occasion.


Ingredients

  • 2 lbs beef chuck roast
  • 4 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onions for serving


Instructions

  1. Prepare the chili sauce by blending the dried guajillo and ancho chilies with minced garlic, cumin, oregano, and a bit of beef broth until smooth.
  2. Add the beef chuck roast to the Crock Pot and pour the chili sauce over it.
  3. Pour in the remaining beef broth and season with salt and pepper.
  4. Close the lid and cook on low for 480 minutes or on high for 240 minutes until the meat is tender.
  5. Remove the beef and shred it using two forks before returning it to the pot to soak up the delicious sauce.
  6. Serve the birria in warm corn tortillas, garnished with chopped cilantro and onions.

Notes

For added flavor, let the flavors meld overnight in the fridge. Adjust spices to taste.
