Description

Enjoy these crispy oven-baked ground turkey tacos that combine crunchy tortillas, melty cheese, and a savory filling for a perfect weeknight meal.


Ingredients

  • 1 lb lean ground turkey (93/7)
  • 1 can black beans, drained and rinsed
  • 1 can diced green chiles (mild)
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas (8-inch)
  • 1 tablespoon homemade taco seasoning (or store-bought)
  • 1 avocado (ripe)
  • 1/4 cup sour cream (optional)
  • 1 tablespoon lime juice (fresh)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment.
  2. Brown the turkey: Heat a skillet over medium heat, cook the ground turkey until no pink remains.
  3. Season and build the filling: Add taco seasoning, black beans, and diced green chiles. Cook until hot and evenly coated.
  4. Fill and roll: Spoon turkey mixture onto each tortilla, sprinkle with Monterey Jack, and roll tightly seam-side down.
  5. Bake for 15–20 minutes until crisp and golden.
  6. Make the avocado dipping sauce: Blend avocado, sour cream (if using), lime juice, salt, and pepper until smooth.
  7. Serve warm with avocado sauce on the side.

Notes

For extra crunch, lightly brush tortillas with oil before baking.
