Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the herb mixture: In a bowl, stir together olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Coat the chicken: Pat the chicken thighs dry, rub the herb mixture over them, focusing on the skin.
- Arrange the thighs skin-side up on a baking sheet with a little space between each piece.
- Bake for 35–40 minutes until the skin is crisp and the chicken reaches an internal temperature of 165°F (74°C).
- Rest for 5 minutes, then garnish with fresh parsley if desired.
