Description

Delicious crispy chicken quesadillas filled with tender chicken, melted cheese, and spices; perfect for a quick meal or gathering.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: salsa, sour cream, or guacamole for serving


Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and bell peppers, and sauté until softened, approximately 4-5 minutes.
  2. Stir in the shredded chicken, garlic powder, cumin, salt, and pepper, mixing until heated through. Remove the mixture from the skillet and set aside.
  3. Wipe the skillet clean and add another tablespoon of olive oil.
  4. Place a tortilla in the skillet and sprinkle half of it with cheese, followed by a generous portion of the chicken mixture. Sprinkle more cheese on top and fold the tortilla over.
  5. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook the other side until browned and the cheese melts.
  6. Repeat with remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot.

Notes

To achieve extra crispiness, use a non-stick skillet and don’t overcrowd it. Brush tortillas lightly with oil before cooking.
