Description
Delicious crispy chicken quesadillas filled with tender chicken, melted cheese, and spices; perfect for a quick meal or gathering.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 small onion, diced
- 1 bell pepper, diced
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional: salsa, sour cream, or guacamole for serving
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and bell peppers, and sauté until softened, approximately 4-5 minutes.
- Stir in the shredded chicken, garlic powder, cumin, salt, and pepper, mixing until heated through. Remove the mixture from the skillet and set aside.
- Wipe the skillet clean and add another tablespoon of olive oil.
- Place a tortilla in the skillet and sprinkle half of it with cheese, followed by a generous portion of the chicken mixture. Sprinkle more cheese on top and fold the tortilla over.
- Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook the other side until browned and the cheese melts.
- Repeat with remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot.
Notes
To achieve extra crispiness, use a non-stick skillet and don’t overcrowd it. Brush tortillas lightly with oil before cooking.
