Description

Quick and delicious bowls featuring crispy salmon, fresh vegetables, and a creamy Bang Bang sauce, perfect for a busy weeknight dinner.

Ingredients

  • 1 lb salmon fillets
  • 1 cup fresh vegetables (bell peppers, cucumbers, carrots)
  • 2 cups steamed rice
  • 1 avocado
  • Bang Bang Sauce: 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 1-2 tablespoons sriracha
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the salmon: Cut it into bite-sized pieces and season with salt and pepper. Drizzle lightly with olive oil.
  3. Bake the seasoned salmon on the baking sheet for 12-15 minutes or until crispy and the fish flakes easily with a fork.
  4. Steam the rice according to the package instructions.
  5. Chop the vegetables: slice bell peppers, cucumbers, and carrots into bite-sized pieces.
  6. Make the Bang Bang sauce by combining mayonnaise, sweet chili sauce, and sriracha in a bowl.
  7. Assemble the bowls with a base of rice, topped with crispy salmon, fresh veggies, and slices of avocado.
