A creamy and zesty potato salad with a unique Creole twist, perfect for gatherings and cookouts.
Ingredients
- 2 pounds Potatoes
- 1/4 cup Creole mustard
- 1 tablespoon Zatarain’s Creole Seasoning
- 1 cup mayonnaise
- 1/2 cup finely chopped onion
- 1/2 cup diced celery
- 1/2 cup chopped green bell pepper
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, about 15-20 minutes, then drain and let them cool.
- Peel and chop the cooled potatoes into bite-sized pieces.
- In a large bowl, combine the chopped potatoes, mayonnaise, onion, celery, and green bell pepper.
- Add Creole mustard, Zatarain’s seasoning, salt, and pepper to taste.
- Mix well until all ingredients are combined.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
This dish can be made ahead of time to allow the flavors to meld beautifully. Experiment with ingredient substitutions like Greek yogurt for a lighter version.
