Description

A comforting classic featuring shredded chicken and a creamy white sauce wrapped in soft tortillas.


Ingredients

  • 2 cups shredded chicken
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 8 flour tortillas
  • 2 cups white sauce (store-bought or homemade)
  • 1 can diced green chiles (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, 1 cup of cheese, garlic powder, diced green chiles (if using), salt, and pepper in a mixing bowl. Mix well.
  3. Place some of the chicken mixture onto the center of a tortilla, roll it up tightly, and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.
  4. Pour the white sauce evenly over the rolled enchiladas and sprinkle the remaining cheese on top.
  5. Bake for 25-30 minutes, until bubbly and golden on top.
  6. Garnish with freshly chopped cilantro before serving.

Notes

Feel free to substitute the chicken with rotisserie chicken for quicker prep. Adjust the cheese to fit dietary needs.
