A comforting classic featuring shredded chicken and a creamy white sauce wrapped in soft tortillas.
Ingredients
- 2 cups shredded chicken
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 8 flour tortillas
- 2 cups white sauce (store-bought or homemade)
- 1 can diced green chiles (optional)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, 1 cup of cheese, garlic powder, diced green chiles (if using), salt, and pepper in a mixing bowl. Mix well.
- Place some of the chicken mixture onto the center of a tortilla, roll it up tightly, and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.
- Pour the white sauce evenly over the rolled enchiladas and sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, until bubbly and golden on top.
- Garnish with freshly chopped cilantro before serving.
Notes
Feel free to substitute the chicken with rotisserie chicken for quicker prep. Adjust the cheese to fit dietary needs.
