Ingredients

  • Salmon fillets
  • Olive oil
  • Butter
  • Garlic (minced)
  • Cherry tomatoes (halved)
  • Fresh spinach
  • Parmesan cheese (grated)
  • Fresh basil (for garnish)
  • Salt and pepper
  • Heavy cream


Instructions

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper; add them to the skillet. Cook for 4-5 minutes on each side, or until cooked through.
  3. Remove the salmon and place it on a plate; cover to keep warm.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Toss in the cherry tomatoes and cook until they start to soften.
  6. Add the spinach and cook just until wilted.
  7. Pour in the heavy cream and sprinkle in the parmesan cheese, stirring to combine.
  8. Return the salmon to the skillet, topping it generously with the creamy sauce.
  9. Garnish with fresh basil before serving.
