Ingredients
- 4 (6-ounce) boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 3 tablespoons extra virgin olive oil, divided
- 4 garlic cloves, minced
- ¼ cup finely chopped yellow onion
- ½ cup sun-dried tomatoes, thinly sliced
- 2 cups baby spinach
- 1½ cups heavy cream
- ¼ cup freshly grated Parmesan cheese
Instructions
- Season the chicken: Pat chicken breasts dry and season with Italian seasoning, kosher salt, and black pepper.
- Sear the chicken: Heat olive oil in a skillet over medium heat and sear chicken for 3-4 minutes on each side until golden brown. Transfer to a plate.
- Cook the aromatics: In the same skillet, sauté onions until softened, then add sun-dried tomatoes and garlic, cooking until fragrant.
- Wilt the spinach: Add spinach to the skillet and sauté until it wilts, about 1 minute.
- Create the cream sauce: Pour in heavy cream and add Parmesan, stirring until combined. Allow to simmer and thicken.
