Ingredients
- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, green onions, cilantro
Instructions
- Brown your choice of ground meat in a large pot over medium heat. Drain any excess fat.
- Add the black beans, corn, diced tomatoes, taco seasoning, and broth. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
- Stir in the heavy cream and cheddar cheese until the cheese melts.
- Serve hot, topped with your choice of optional garnishes.
Notes
For a leaner option, substitute ground turkey. Use vegetable broth for a vegetarian version.
