Description

A comforting and creamy taco soup that combines hearty ground meat, beans, and cheese, making it a perfect dish for family gatherings or busy weeknights.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, green onions, cilantro


Instructions

  1. Brown your choice of ground meat in a large pot over medium heat. Drain any excess fat.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and broth. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  4. Stir in the heavy cream and cheddar cheese until the cheese melts.
  5. Serve hot, topped with your choice of optional garnishes.

Notes

For a leaner option, substitute ground turkey. Use vegetable broth for a vegetarian version.
