Ingredients

  • 1 lb ground beef (or turkey)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups beef broth (or vegetable broth)
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, diced
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Brown the ground beef and diced onion in a large pot over medium heat until cooked through.
  2. Drain any excess fat.
  3. Add the taco seasoning and cook for about a minute.
