- 1 chicken breast from a rotisserie chicken, diced
- 2 cups fresh broccoli florets
- 1 cup heavy cream (or whipping cream)
- 3 tablespoons butter
- ⅓ onion, chopped
- 3 medium cremini mushrooms, sliced
- ½ cup freshly grated Parmesan cheese
- ⅛ teaspoon salt
- Freshly ground black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain and set aside.

- Slice the rotisserie chicken and add it to the skillet. Pour in the cream and bring to a gentle boil. Reduce heat and simmer for 3 minutes.
- Turn the heat to low and stir in the Parmesan cheese until melted. Season with salt and pepper.
- Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. Serve immediately.
Notes
Use freshly grated Parmesan for best flavor. For additional crunch, add vegetables at the end.
