A comforting weeknight meal featuring rotisserie chicken, fresh broccoli, and a rich Alfredo sauce, perfect for busy families.
Ingredients
- 1/3 lb pasta (linguine or preferred pasta)
- 1 chicken breast (from rotisserie chicken)
- 2 cups broccoli florets
- 1 cup cream (heavy cream or half-and-half)
- 1/3 onion (diced)
- 3 tbsp butter
- 1/2 cup freshly grated Parmesan cheese
- 1/8 tsp salt
- Freshly grated pepper, to taste
- 3 medium cremini mushrooms (sliced)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, following the package instructions. Drain and set aside.
- Sauté the Veggies: In a large skillet, melt 3 tbsp butter over medium heat. Add the diced onion, minced garlic, sliced mushrooms, and broccoli florets. Sauté for 5 minutes until the vegetables soften.
- Add Chicken and Cream: While the vegetables cook, slice the rotisserie chicken into bite-sized pieces. Add the chicken to the skillet along with 1 cup of cream. Bring to a simmer and cook for 3 minutes, stirring occasionally.
- Combine with Pasta: Add the cooked pasta to the skillet, stirring to combine everything evenly.
- Add Cheese and Serve: Stir in ½ cup of freshly grated Parmesan cheese. Season with salt and freshly ground pepper to taste. Garnish with chopped parsley and serve hot.
