Description
A refreshing and creamy pasta salad that’s perfect for any occasion, easy to make, and always a crowd-pleaser.
Ingredients
- 8 oz pasta (elbow, rotini, or your choice)
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 tablespoon parsley or dill (optional)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and let it cool.
- Mix mayonnaise and sour cream in a large bowl until smooth.
- Add the cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, and shredded cheese to the bowl.
- Season generously with salt and pepper. Toss everything until well coated.
- If desired, stir in parsley or dill for an extra pop of flavor.
- Cover and refrigerate for at least 60 minutes before serving.
Notes
Serve on a bed of fresh lettuce for added crunch. Pairs well with grilled chicken or tofu.
