Description

A refreshing and creamy pasta salad that’s perfect for any occasion, easy to make, and always a crowd-pleaser.


Ingredients

  • 8 oz pasta (elbow, rotini, or your choice)
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon parsley or dill (optional)


Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and let it cool.
  2. Mix mayonnaise and sour cream in a large bowl until smooth.
  3. Add the cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, and shredded cheese to the bowl.
  4. Season generously with salt and pepper. Toss everything until well coated.
  5. If desired, stir in parsley or dill for an extra pop of flavor.
  6. Cover and refrigerate for at least 60 minutes before serving.

Notes

Serve on a bed of fresh lettuce for added crunch. Pairs well with grilled chicken or tofu.
