Description

A vibrant and comforting pasta dish featuring fresh vegetables and a luscious cream sauce, perfect for any dinner occasion.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup bell peppers, sliced (any color works)
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh herbs (like basil or parsley)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Toss in the bell peppers, zucchini, broccoli, and cherry tomatoes. Cook until veggies are tender, around 5-7 minutes.
  4. Stir in the heavy cream, grated Parmesan, lemon juice, salt, and pepper, mixing well.
  5. Add the cooked pasta to the skillet and toss until everything is fully coated in the creamy sauce.
  6. Serve immediately, garnished with fresh herbs.

Notes

For best results, use fresh seasonal vegetables and serve with garlic bread and a side salad.
