Description
A comforting and creamy dish combining tender gnocchi with fresh spinach, tangy feta, and a rich sauce, perfect for weeknight dinners.
Ingredients
- 1 package (16-17 oz) potato gnocchi (shelf-stable, fresh, or frozen)
- 5 oz baby spinach (fresh)
- 6 oz Greek feta cheese, crumbled (about 1 cup)
- 1 lemon, halved
- 5 tbsp extra-virgin olive oil
- Salt and pepper, to taste
- ¼ to ½ tsp crushed red pepper flakes (optional)
- 2 scallions, thinly sliced
- 1 handful chopped fresh dill
- 1 handful chopped fresh mint
Instructions
- Massage the spinach with half of the feta, lemon juice, olive oil, and a pinch of salt in a large bowl. Set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the gnocchi and cook until golden and crispy, about 8-10 minutes. Let cool for 5 minutes.
- Add the crispy gnocchi to the spinach, along with crushed red pepper, scallions, dill, and mint. Drizzle with remaining olive oil and add remaining feta. Toss to combine.
- Squeeze the remaining lemon juice over the dish, toss again, and serve warm with extra herbs or feta if desired.
Notes
For added creaminess, consider using a touch of heavy cream or Greek yogurt.
