Description

A vibrant and easy dish featuring salmon in a rich, creamy garlic sauce with fresh spinach and tomatoes.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Sear each fillet for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  2. Add the minced garlic to the same skillet and sauté for approximately 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the halved cherry tomatoes, fresh spinach, Italian seasoning, and adjust with salt and pepper to taste.
  4. Allow the sauce to simmer for a few minutes until it thickens slightly.
  5. Return the salmon to the skillet and generously spoon the creamy sauce over each fillet. Let it warm together for an additional 2 minutes.
  6. Garnish with fresh parsley before serving and enjoy!

Notes

Feel free to substitute heavy cream with coconut milk for a lighter version or use kale instead of spinach for different texture.
