A vibrant and easy dish featuring salmon in a rich, creamy garlic sauce with fresh spinach and tomatoes.
Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Sear each fillet for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
- Add the minced garlic to the same skillet and sauté for approximately 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the halved cherry tomatoes, fresh spinach, Italian seasoning, and adjust with salt and pepper to taste.
- Allow the sauce to simmer for a few minutes until it thickens slightly.
- Return the salmon to the skillet and generously spoon the creamy sauce over each fillet. Let it warm together for an additional 2 minutes.
- Garnish with fresh parsley before serving and enjoy!
Notes
Feel free to substitute heavy cream with coconut milk for a lighter version or use kale instead of spinach for different texture.
