Description

This garlic butter shrimp and rice is a quick and delicious meal that combines juicy jumbo shrimp with rich garlic butter and fluffy rice, topped with parmesan cheese for creaminess.


Ingredients

  • 1 cup minute rice
  • 6 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 12-16 oz extra large shrimp, peeled and deveined
  • ¼ cup shredded parmesan cheese
  • 3 tablespoons milk
  • 2 tablespoons chopped fresh parsley
  • Salt and fresh ground black pepper to taste
  • Extra parmesan cheese for garnish (optional)
  • Fresh lemon wedges for serving


Instructions

  1. Prepare your minute rice according to package directions.
  2. Melt the butter in a large skillet over medium heat, then add the minced garlic and cook for 2-3 minutes until lightly browned.
  3. Add the shrimp to the skillet and cook for about 2 minutes until they turn pink and opaque.
  4. Add the prepared rice to the skillet and mix well.
  5. Stir in the parmesan cheese, milk, parsley, salt, and pepper, and mix until creamy and heated through, about 1-2 minutes.
  6. Garnish with extra parmesan cheese and fresh parsley, and serve immediately while hot.

Notes

Use fresh garlic for the best flavor, and freshly grated parmesan for a creamy texture. Be careful not to overcook the shrimp.
