Description

A comforting and creamy chicken tortilla soup that’s easy to make and perfect for any occasion.


Ingredients

  • 2 cups of cooked chicken (fresh, leftover, or rotisserie)
  • 1 cup of cheddar cheese, shredded
  • 4 ounces of cream cheese
  • 4 cups of chicken broth
  • 1 can of black beans, rinsed and drained
  • 1 can of corn, drained
  • 1 can of diced tomatoes with green chilies
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Tortilla chips or strips for serving
  • Sour cream and fresh cilantro for garnish (optional)


Instructions

  1. Heat a drizzle of oil in a large pot over medium heat and sauté the diced onion and minced garlic until fragrant and translucent.
  2. Add in the cooked chicken, chicken broth, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Stir well.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Stir in both the cheddar cheese and cream cheese until melted and creamy.
  5. Serve hot with tortilla chips or strips on top, and garnish with sour cream and fresh cilantro if desired.

Notes

For added depth, consider roasting your garlic before adding it to the soup. You can add lime juice for extra flavor!
