Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Make the crust: In a medium bowl, combine graham cracker crumbs and sugar. Stir in melted butter until evenly coated. Press the mixture into the bottom of a 9-inch springform pan.
  3. Prepare the filling: In a large bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Fold in sour cream gently.
  4. Pour the filling into the crust. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool inside for another hour.
