- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Instructions
- Preheat your oven to 325°F (163°C).
- Make the crust: In a medium bowl, combine graham cracker crumbs and sugar. Stir in melted butter until evenly coated. Press the mixture into the bottom of a 9-inch springform pan.
- Prepare the filling: In a large bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Fold in sour cream gently.
- Pour the filling into the crust. Smooth the top with a spatula.
- Bake for 60 minutes or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool inside for another hour.
- Chill: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
