Ingredients
- 3 cups broccoli florets
- 3 cups cauliflower florets
- 2 cups carrots (sliced or grated)
- 15 oz sweet corn (canned or frozen)
- ½ cup red onion (finely chopped)
- 1 cup sharp cheddar cheese (shredded)
- ½ cup mayonnaise
- ½ cup sour cream or kefir
- 2 tablespoons dry Ranch dressing mix
- 2 tablespoons lemon juice
- ¼ cup honey
- ¼ teaspoon salt
Instructions
- In a large mixing bowl, combine the broccoli florets, cauliflower florets, sliced carrots, sweet corn, finely chopped red onion, and shredded cheddar cheese.
- In another bowl, mix together the mayonnaise, sour cream, and Ranch dressing mix until smooth. Adjust seasoning to taste.
- In a separate bowl, whisk the mayonnaise with sour cream, lemon juice, honey, and salt to create a honey-lemon dressing.
- Pour your dressing over the salad mixture and toss everything together until well combined. Serve right away or refrigerate for later.
Notes
To store leftovers, transfer to an airtight container and refrigerate for up to 3 days. For freezing, store the dressing separately.
