Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 2 tablespoons butter (melted), plus more for the pan
  • 2 teaspoons vanilla extract
  • 2 large eggs (room temperature)
  • 1 cup milk (whole or plant-based)


Instructions

  1. Whisk the dry ingredients in one bowl.
  2. Beat softened cream cheese with sugar until smooth, then whisk in butter, eggs, vanilla, and milk.
  3. Fold the wet mix into the dry ingredients until combined—don’t overmix.
  4. Cook pancakes on a lightly greased skillet over low–medium heat until bubbles form, then flip and finish until golden.
  5. Serve warm with your favorite toppings.
