Delicious Cream Cheese Chicken Enchiladas are a comforting dish filled with shredded chicken and cream cheese, topped with enchilada sauce and cheese.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, softened cream cheese, half of the shredded cheese, garlic powder, onion powder, salt, and pepper, mixing until smooth.
- Spread about 1/4 cup of the chicken mixture onto each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.
- Pour the enchilada sauce evenly over the rolled tortillas and sprinkle the remaining shredded cheese on top.
- Bake for 20-25 minutes, or until heated through and the cheese is bubbling.
- Garnish with chopped cilantro if desired and serve hot.
