Description

A creamy, bacon-loaded casserole featuring ranch-seasoned chicken topped with buttery Ritz crackers, perfect for busy weeknights.


Ingredients

  • 4 cups cooked chopped chicken (rotisserie works perfectly)
  • 1 (1-oz) package ranch dressing mix
  • 1½ cups shredded cheddar cheese
  • 1 cup chopped cooked bacon
  • 1½ cups sour cream
  • 1 (10.5-oz) can unsalted cream of chicken soup
  • 1½ cups crushed Ritz crackers
  • ¼ cup unsalted butter, melted


Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×9-inch baking dish with cooking spray.
  2. In a large mixing bowl, combine the chopped chicken, ranch seasoning, cheddar cheese, bacon, sour cream, and cream of chicken soup. Stir everything together until well blended and evenly distributed.
  3. Spread the chicken mixture into your prepared baking dish, smoothing the top with a spatula.
  4. In a separate small bowl, toss the crushed Ritz crackers with the melted butter until the crumbs are evenly coated. Sprinkle this mixture over the chicken layer.
  5. Bake uncovered for 30 to 40 minutes, until the casserole is bubbly around the edges and the cracker topping turns golden brown.

Notes

For extra crispiness, broil the casserole for the last 2-3 minutes of baking. Let it rest for 5 minutes after removing it from the oven for easier serving.
