Description

A heartwarming chicken and dumplings recipe perfect for chilly evenings that combines tender chicken, vegetables, and fluffy dumplings.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2/3 cup milk
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish


Instructions

  1. In a large pot, bring the chicken broth to a boil over medium heat.
  2. Add the chopped onion and diced carrots, cooking for 5-7 minutes until tender.
  3. Stir in the shredded chicken and frozen peas, seasoning with salt and pepper.
  4. In a separate bowl, mix flour, baking powder, and salt. Slowly add milk to form a soft dough.
  5. Drop spoonfuls of the dumpling mixture onto the simmering broth. Cover and steam for 15-20 minutes without lifting the lid.
  6. Once the dumplings are fluffy and cooked through, garnish with fresh herbs and serve immediately.

Notes

Use rotisserie chicken to save time. Don’t lift the lid while the dumplings steam for fluffy texture. Sauté onions in butter for added flavor.
