Description

A flavorful and protein-packed dish featuring chicken in a creamy, garlicky sauce made with butter, lemon, and spices.


Ingredients

  • 6 tablespoons grass-fed butter (or ghee)
  • 6 garlic cloves, minced
  • 1 small lemon, zest and juice
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon red pepper flakes
  • 2 tablespoons freshly minced parsley
  • Sea salt and pepper, to taste
  • 1 1/2 lbs chicken breasts, sliced in half lengthwise
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder


Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken breasts with sea salt, pepper, thyme, garlic powder, and half of the cowboy butter. Rub the mixture on the chicken and let it marinate for 15 minutes.
  2. Prepare the Sauce: In a small saucepan, melt the butter over medium heat. Add garlic and sauté for 1 minute. Stir in lemon zest, juice, Dijon mustard, Worcestershire sauce, paprika, onion powder, red pepper flakes, and simmer for 2 minutes. Blend until smooth and emulsified. Stir in parsley.
  3. Cook the Chicken: Heat a skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden and cooked through. Use a thermometer to check for doneness (165°F internal temperature).
  4. Baste and Serve: Drizzle the remaining cowboy butter over the cooked chicken and garnish with parsley. Serve immediately with your favorite sides.

Notes

For best results, let the chicken come to room temperature before cooking. Adjust the spice level with red pepper flakes or add cayenne for extra heat.
