Description

A flavor-packed grilled chicken dish marinated in a sweet and tangy mixture, topped with crispy bacon, melted cheddar cheese, and BBQ sauce.


Ingredients

  • 4 thinly sliced chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup oil
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 4 to 6 slices crispy bacon
  • 1 cup BBQ sauce (plus more for dipping)
  • 1 cup grated cheddar cheese (or 4 slices)
  • 1/4 cup chopped red onion
  • Chopped cilantro
  • Pickled jalapeños (optional)


Instructions

  1. In a bowl, combine the oil, honey, Dijon mustard, salt, and pepper. Set aside 1/4 cup of the marinade to baste the chicken later.
  2. Coat the chicken breasts with the marinade and place them in a resealable bag. Refrigerate for at least 30 minutes or up to 1 hour.
  3. Cook the bacon until crispy. Either pan-fry it or bake it in the oven at 400°F (200°C) for about 20-25 minutes. Once done, chop into small pieces.
  4. Preheat your grill or skillet to medium heat. Cook the chicken for 6-9 minutes per side, basting with the reserved marinade halfway through, until it reaches an internal temperature of 160°F (71°C).
  5. Sprinkle the cheese on the chicken and allow it to melt. Drizzle BBQ sauce over the chicken and top with crispy bacon, cilantro, and red onion. Serve hot and enjoy!

Notes

You can easily customize this dish to suit your tastes or dietary preferences. For a lighter version, swap out the BBQ sauce for a sugar-free option.
