Description

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup butter (softened)
  • 1 cup sugar
  • 1 egg
  • 1 ½ teaspoons cotton candy flavoring
  • Pink food coloring
  • Blue food coloring
  • Powdered sugar or flour (for rolling)
  • 16 ounces white icing
  • Sprinkles
  • 1 teaspoon cotton candy extract (optional)


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl. Set this dry mix aside.
  3. Cream the softened butter and sugar in a mixing bowl until light and fluffy.
  4. Add the egg and cotton candy extract; mix well until combined.
  5. Incorporate the dry ingredients into the wet mixture gradually until just combined. The dough may seem a bit crumbly.
  6. Turn out the dough onto a surface dusted with powdered sugar or flour, and divide it into two equal portions.
  7. Add pink food coloring to one dough ball and blue food coloring to the other, kneading until the colors are well blended.
  8. Roll each portion out to ¼ inch thickness. Place one sheet of dough atop the other and roll them together tightly like a jelly roll.
  9. Slice the rolled dough into ¼ inch rounds and place them on the prepared baking sheet.
  10. Bake for 7 to 9 minutes, avoiding browning. Allow cooling on the sheet for at least 20 minutes before transferring them to a wire rack.
  11. Microwave the icing for 1 minute, removing the lid and aluminum seal. Stir in cotton candy extract if desired.
  12. Pipe or drizzle the icing over the cooled cookies and sprinkle with colorful toppings while the icing is still wet.
  13. Allow the icing to fully dry before stacking the cookies (using parchment or wax paper between layers for best results).

Store in an airtight container at room temperature for up to a week, or freeze between layers of parchment paper for longer storage.
