A lighter take on buffalo chicken dip, using cottage cheese for a creamy, high-protein appetizer without sacrificing flavor.
Ingredients
- 1 cup cottage cheese (low-fat or full-fat)
- 1 tablespoon olive oil
- ¼ cup buffalo sauce (adjust based on heat preference)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- 1 cup shredded chicken breast
- 1 cup diced red bell pepper
- 2 green onions, sliced
- ¼ cup shredded cheddar cheese, plus extra for topping
Instructions
- Preheat your air fryer to 375°F and grease a medium oven-safe ceramic dish.
- In a blender, combine cottage cheese, olive oil, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Blend until smooth.
- In a large bowl, mix the blended cottage cheese mixture with shredded chicken, diced bell pepper, sliced green onions, and ¼ cup cheddar cheese.
- Transfer to the greased dish, top with additional cheddar cheese, and air fry for 8-10 minutes until golden brown and bubbly.
- Serve hot with your favorite dippers.
Notes
Can be prepared ahead of time and refrigerated until ready to cook. Adjust buffalo sauce for desired spice level.
