Description

A lighter take on buffalo chicken dip, using cottage cheese for a creamy, high-protein appetizer without sacrificing flavor.


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 tablespoon olive oil
  • ¼ cup buffalo sauce (adjust based on heat preference)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded chicken breast
  • 1 cup diced red bell pepper
  • 2 green onions, sliced
  • ¼ cup shredded cheddar cheese, plus extra for topping


Instructions

  1. Preheat your air fryer to 375°F and grease a medium oven-safe ceramic dish.
  2. In a blender, combine cottage cheese, olive oil, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Blend until smooth.
  3. In a large bowl, mix the blended cottage cheese mixture with shredded chicken, diced bell pepper, sliced green onions, and ¼ cup cheddar cheese.
  4. Transfer to the greased dish, top with additional cheddar cheese, and air fry for 8-10 minutes until golden brown and bubbly.
  5. Serve hot with your favorite dippers.

Notes

Can be prepared ahead of time and refrigerated until ready to cook. Adjust buffalo sauce for desired spice level.
