Ingredients
- 4 cups corn (fresh, frozen, or canned)
- 1 bell pepper (diced)
- 1/2 red onion (finely chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup cilantro (chopped)
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Combine the corn, diced bell pepper, chopped red onion, halved cherry tomatoes, and cilantro in a large bowl.
- Whisk together the mayonnaise and lime juice in a small bowl until smooth.
- Drizzle the dressing over the vegetable mixture and toss until everything is well coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For an egg-free option, replace mayonnaise with a vegan alternative. Grilling the corn beforehand adds a nice smoky char.
