Description

Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 bell pepper (diced)
  • 1/2 red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper to taste


Instructions

  1. Combine the corn, diced bell pepper, chopped red onion, halved cherry tomatoes, and cilantro in a large bowl.
  2. Whisk together the mayonnaise and lime juice in a small bowl until smooth.
  3. Drizzle the dressing over the vegetable mixture and toss until everything is well coated.

Notes
