Description

A rich and creamy corn chowder with crispy bacon, perfect for cozy evenings.


Ingredients

  • 4 slices of bacon
  • 1 onion, diced
  • 2 medium potatoes, peeled and diced
  • 2 cups of sweet corn (fresh, frozen, or canned)
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped fresh chives for garnish (optional)


Instructions

  1. Cook the bacon in a large pot over medium heat until crispy; remove and set aside, leaving the drippings behind.
  2. Add the diced onion to the pot and sauté until translucent.
  3. Incorporate the diced potatoes and corn, cooking for a few minutes.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer until the potatoes are tender—about 15 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Crumble the reserved bacon and fold it back into the soup.
  8. Serve it hot, garnished with fresh chives, if desired.

Notes

For a lighter option, use turkey bacon and vegetable broth to make it vegetarian.
