Ingredients
- 4 slices of bacon
- 1 onion, diced
- 2 medium potatoes, peeled and diced
- 2 cups of sweet corn (fresh, frozen, or canned)
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Chopped fresh chives for garnish (optional)
Instructions
- Cook the bacon in a large pot over medium heat until crispy; remove and set aside, leaving the drippings behind.
- Add the diced onion to the pot and sauté until translucent.
- Incorporate the diced potatoes and corn, cooking for a few minutes.
- Pour in the chicken broth and bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer until the potatoes are tender—about 15 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Crumble the reserved bacon and fold it back into the soup.
- Serve it hot, garnished with fresh chives, if desired.
Notes
For a lighter option, use turkey bacon and vegetable broth to make it vegetarian.
