A warm and creamy corn chowder that’s perfect for cozy gatherings and weeknight dinners.
Ingredients
- 4 slices bacon, chopped
- 1 onion, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 3 cups corn (fresh, frozen, or canned)
- 3 cups vegetable or chicken broth
- 2 cups potatoes, diced
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the diced onion, celery, and carrots to the pot. Sauté for about 5 minutes until softened.
- Stir in the corn, broth, and diced potatoes. Bring the mixture to a boil, then reduce heat. Let it simmer until the potatoes are tender, approximately 15 minutes.
- Stir in the heavy cream and the cooked bacon. Season with salt and pepper to taste. Serve hot and enjoy!
Notes
Feel free to substitute with turkey bacon or use coconut milk for a dairy-free version. You can also add spices like red pepper flakes for heat, or use herbs for extra flavor.
